Food for thought!! Getting Ready for the Party!!

"ROOTED IN NAUVOO”  WASATCH 5TH WARD BIRTHDAY PARTY 3/5/2013
BEEF STEWAprox. Time to prepare stew=  3hours in-active time, and an additional hour active time.
3 T. Olive Oil
2 T. Butter
2 pounds beef stew meat
1 med. Onion diced
5 cups beef broth
1 T. Worchestershire Sauce
3 T. tomatoe Paste
½ t. paprika
1 ½ t. sugar
1 t. salt
½ t. pepper
2 t. basil
2 stalks celery
6 potatoes diced (large pieces)
8 carrots, unpeeled, roughly sliced
4 T. flour
Heat olive oil and butter in large pan, when hot throw in stew meat and quickly brown on all sides (5 min.). Remove meat to a clean plate and set aside.  Throw onion into pot, reduce heat to low, cook until softened about 3 min. Then add beef broth, Worcestershire sauce, Tomato paste, paprika, basil, sugar, salt, and pepper.  Return the meat to the pot, cover it, and simmer the stew over very low heat for 2-3 hours until meat is very tender. If the liquid level gets to low add 1-2 cups hot water as needed.  (You can also put the stew in the crock pot if you desire). After the meat is very tender…Add potatoes, carrots, and celery to the pot and continue simmering for 3o min. more or until vegetables are tender.  To thicken the stew, remove 1 cup of the cooking liquid and whisk in the flour until smooth.  Pour the flour mixture into the pot and simmer for an additional 10 minutes, or until the stew is very thick.
***if too thin, you can repeat the flour step again by half, if too thick, add a little more beef broth.**
Serves 10-12
